Parmesan Couscous

Just made this for dinner tonight. So yummy!!! I love couscous because it is so fast. Glad that I had all of the ingredients in my pantry for this one. I got this recipe from

2 C chicken broth
1 TBSP butter
10 oz uncooked plain couscous
1/3 C grated Parmesan cheese
1 TBSP fresh lemon juice
1 TBSP olive oil
1/4 tsp salt
1/8 tsp freshly ground pepper

Bring chicken broth and butter to a boil. Add couscous, stir until well mixed, remove from heat and let sit covered for 5 minutes. Add remaining ingredients to couscous and mix well. Serve and enjoy.
