leftover Turkey Nachos Cuban Style

We had this dinner at Chelsea Carbonells a few years ago and could not get enough of it.
Now it's tradition to make it every year after Thanksgiving. KIDS Love it!

Turkey breasts
1 tblsp olive oil
1 tlbsp butter
5-6 garlic cloves/crushed
1 tsp cumin
1 tsp mexican oregano
1/2 tsp. garlic powder
small can of tomato sauce
1 can diced tomatos
1/2 cp of chicken broth
1 can refried beans
1 can black beans
1 small can of chopped olives
Shredded cheese

Brown the turkey in olive oil and butter then add ingredients to chicken broth.
Let simmer for 3 hours. After add 2 tsp of flour and mix to thicken.
shred chicken.
Layer pan with tortilla chips, cheese, chicken, refried beans and black beans and olives.
Bake at 425 degrees for 10 minutes and serve with a little sour cream on top or avocado too.

lasagna

Okay Ladies, I like to be known for few ingredients and simple but this recipe has been requested a few times so I must ruin my reputation and post this recipe which has 12 ingredients. This is a little time consuming but what lasagna isn't?

In a large Saucepan...
Brown:
1 lb of Italian Sausage
1/2 lb of hamburger
chopped onion (to taste)
lots of Garlic! I usually do 4-5 cloves

Add and heat
1 jar of "Classico Spicy Pesto Tomato sauce"
1 can of diced Italian tomatoes in juice
1 can of tomato sauce
1/4 cp of fresh chopped basil

Cook 1 box of lasagna noodles, rinse and lay flat on towel
slice 1- 1 1/2 lbs of mozzarella cheese in 1/4 inch slices
12 oz of Ricotta cheese with 1 egg blended in.
Parmesan cheese

There is a trick to making this lasagna great!!!
Layer the ingredients but very little sauce between the noodles. So that it's mostly cheese.
You add enough just to wet the noodles. After layering, pour the remainder of the sauce on top add Parmesan cheese, olives or any garnish and bake for 1 hour at 350 degrees.

Leftover Turkey Ideas

I made a large turkey the other night for dinner and we have a huge amount of leftovers. I would love some new ideas on what to do with the turkey if anyone has them. Thank you all for your help. Maybe you will get some ideas as well for what to do after Thanksgiving dinner.
