Balsamic Salad
Ingredients:
1 (16 oz) package penne pasta
¾ cup chopped red onion
2 cucumbers, sliced
1 (15 oz garbanzo beans (chick peas), drained & rinsed
1 ½ t. Italian seasoning
1 cup balsamic vinegar
Cook the pasta according to package directions;
Drain, rinse with cold water and drain again;
Place pasta in a large bowl;
Add red onion, cucumbers, beans, seasoning and vinegar to the pasta.
Cover the bowl and shake well to coat pasta,
Marinate in the regrigerator overnight or for several hours.
