Yankie Bread

Pair this up with Lee Ann's V-8 Chili; it's a rootin, tootin good time!

Our Texian friends call cornbread with sugar "Yankee Bread" and it ain't no compliment. Most Texians do no like sugar in their corn bread, or at least the ones we know.



Ingredients:

2 eggs, slightly beaten
1 cup milk
1/4 cup vegetableoil or melted shortening
1 1/2 cups yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
2 1/4 teaspoons baking powder
3/4 teaspoon salt

Preheat oven 450*;

Grease 8 or 9 inch square;

In large bowl, mix all ingredients; pour into pan;

Bake 20-25 minutes or until toothpick inserted in center come out clean

Serve warm, if desired.

We like'em warm, with butter and honey.

If making muffins: Fill muffin cups 2/3 full for 15 minutes for large muffin tin; 9-11 minutes for mini-muffin pan.
