Dilly Beans

My friend Bex got me hooked on these little, tasty suckers!


2 pounds of green beans
1/4 cup canning salt
2 1/2 cups vinegar
2 1/2 cups water
4 cloves of garlic
4 heads of dill
4 dried cayenne pepper
4 pint sized jars

•Start water bath;
•Trim ends off green beans;
•Pack beans lengthwise into jars, leaving 1/4-inch headspace;
•Combine salt, vinegar & water in a large saucepot; Bring to boil;
•While waiting for items to come to boil, continue back to jars;
•Add one garlic, one head of dill and one pepper;
•Get 2-piece lids ready and boil;
•Ladle hot liquid over beans leaving 1/4-inch headspace
•Remove air bubbles;
•Adjust two-piece caps;
•Process pints 10 minutes in water bath canner;
•Makes 4 pints
