Foolproof Beef & Broccoli

Ingredients:

1 pound boneless beef sirloin or top round steak strips (3/4 inch thick)
2 T. veggie oil
2 cups broccoli flowerets
1 medium oninon, cut into wedges
1/8 teaspoon garlic powder or 1 clove garlic, minced
1 can (10 oz) condensed cream of broccoli soup
1/3 cup water
1 T. soy sauce
4 cups hot cooked rice
green onion (optional)

Slice beef into very thin strips;

In medium skillet over medium-high heat; heat half of the oil. Add beef in two batches and stir-fry until browned. Set beef aside;

Reduce heat to medium; Add remaining oil; add broccoli, onion & garlic powder (or clove) and stir-fry until tender-crisp;

Add soup, water and soy. Heat to boil;

Return beef to pan and heat through;

Serve over rice.

If desired, garnish with green onion.
