These are the best muffins ever! They are so moist and yummy, they never make it very long at our house! Lisa D. these are the ones you asked for the recipe for a while back at MOM's
Mix together
1 1/2 sticks butter-softened
1 c. brown sugar
1 c. sugar
then add 3 eggs-1 at a time-blend until smooth. Set aside.
in separate bowl, stir together
1/2 c. buttermilk
1 c. pumpkin puree
1 t. vanilla
in another bowl mix
2 c. flour
2 t. baking powder
1 t. baking soda
1 t. cinnamon
1/2 t. cloves
1/2 t. nutmeg
then alternately add the wet and dry ingredients into the sugars/eggs. Stir until smooth.
Bake at 350* for 30 min. in sprayed muffin pans filled about 2/3 the way up with batter. Cool for a few minutes then push the middle of the muffin with your fingers so you can fill them with cream cheese frosting after they cool completely.
