BEST Granola recipe

I looooove homemade granola. I love greek yogurt topped with a little homemade granola and honey. Maybe a few berries tossed on top. It's like dessert :)

This recipe is so good! I got it by email, I think from Michelle P or Angie F. I pretty much make a batch weekly! Lisa D brought this to us when we brought our girl home from Ethiopia, and we've been hooked ever since. My whole family loves it.

Maple Nut Granola
3 1/2 C old fashioned oats
1/2 C sesame seeds
1/2 C sunflower seeds
1/2 C pumpkin seeds (also called pepitas)
1/2 C butter (1 stick- I have also used part butter, part coconut oil)
1/2 C Maple Syrup ( Use 1/4 C honey, 1/4 C Maple syrup)
1Tbsp Nut Butter ( I use Peanut Butter)
1/2 tsp Almond Extract
1 tsp Vanilla extract
1/4 C Flax Meal (optional-adds great omega 3's and fiber, and you'll never know it's there!)
1 1/2 tsp Cinnamon (optional)

Mix dry ingredients in a large mixing bowl. Melt butter and maple syrup/honey on stovetop until all melted together. Add nut butter, stir until melted. Remove from heat and add almond extract and vanilla extract. Stir well, pour mixture over oat mixture. Spread on a cookie sheet and bake at 300 for 45-60 min. I usually check it and stir every 20 minutes while cooking. If you like it chewy, take it out sooner, I like mine nice and crunchy so I usually end up closer to an hour.  SO GOOD.

sooo good! I didn't have the pumpkin seeds and really wanted to make this today! Granola is the only way I can get my Greek Yogurt down :) I added some cinnamon. Love the almond extract (I only used 1/2 tsp.)

Also......40 minutes was PLENTY for mine :) Almost toasted it a wee bit too long :)

You know, i need to edit this recipe to the tune of 1/2 tsp of almond extract. I typed it from memory, since I rarely look at the recipe anymore, but it does call for 1/2 tsp, not 1.

Your lovely gas oven is probably more effective than mine at toasting too.

I made this very yummy granola today. I was so excited to try it that I made sure to finish off my store-bought granola this morning so I could try it today. I tried it right from the oven because I was so excited. I loved it. Thank you for posting it. I love making things from scratch and not having all the extra "stuff" to give it a longer shelf life!

I made this agagin today! I finished off the last of my first batch for breakfast and wanted to make sure we had some for breakfast tomorrow!
