Crock Pot Chicken for Tacos

Another simple one here from me (see a theme??)


Four large boneless skinless chicken breasts
One pkg. taco seasoning
One 14.5oz can diced tomatoes w/green chilies

Place chicken in crockpot.
Mix together tomatoes and taco seasoning.
Pour over chicken.

Cover with lid, cook on High 2-3 hours or Low 4-6 hours.
When done chicken will shred easily.

Serve shredded chicken in heated corn tortillas with taco fixings.

I had a very busy day yesterday. It was great to have my crockpot out the night before, it allowed me to throw dinner together in the morning and made me look like I cooked all day at night.

I added a jar of my mexican tomatoes that I canned and 1 tablespoon of cumin. Just cuz I love cumin in mexican like dishes.
You rock baby. Thanks for a great recipe. It will definintely be on the menu next time around.
