Delicious Hash Brown Potatoes

Well, I'm finally getting around to posting a recipe! I have had so many people asking me for this one so I figured I'd better post it first. Enjoy :). Jenn

1 30 oz. bag of frozen hash brown potatoes
1 can cream of chicken soup (I use fat free)
1 cup sour cream (I use fat free)
2 cups shredded cheddar cheese
salt and pepper to taste

Topping: 1/2 cup melted butter and 2 cups crushed cornflakes (4 cups uncrushed)

Mix all ingredients together except the topping. Spray 9x13 pan with cooking spray and spoon potato mixture into the pan. Mix crushed cornflakes with the melted butter until coated and sprinkle on top of the potatoes. Bake at 350 degrees for 45 minutes. Yummy!

Sounds good. Do you use shredded or cubed potatoes?

Michelle, I use the shredded hash browns. Julie made them for MOMS on Thursday. Yum... and I didn't even have to make it!
