1-32 oz Roasted Red Pepper & Tomato Soup
1-12.5 oz can of Chicken Breast
1 can of black bean (or favorite-rinsed)
1 can of corn (I use 1 to 1 1/2 cups of frozen corn)
1 cup of favorite rice
sour cream (optional)
salsa (optional)
favorite seasonings (mine: cumin, salt, pepper, mexican seasoning)
Pour soup in pan. Add favorite rice. Bring to boil and continue cooking until rice is nearly tender. Add rest of ingredients (be sure to drain them) until heated through. Dish up, top with sour cream and salsa.
See you can have a nap and dinner too!

okay, forget the knitting prize. I don't want to overwelm you. Perhaps I could win the prize of helping you clean and pack boxes! That sounds like a prize I've always wanted!
