We had this dinner at Chelsea Carbonells a few years ago and could not get enough of it.
Now it's tradition to make it every year after Thanksgiving. KIDS Love it!

1 can diced tomatos
1/2 cp of chicken broth
1 can refried beans
1 can black beans
1 small can of chopped olives

Brown the turkey in olive oil and butter then add ingredients to chicken broth.
Let simmer for 3 hours. After add 2 tsp of flour and mix to thicken.

lasagna
Okay Ladies, I like to be known for few ingredients and simple but this recipe has been requested a few times so I must ruin my reputation and post this recipe which has 12 ingredients. This is a little time consuming but what lasagna isn't?
In a large Saucepan...
Brown:
1 lb of Italian Sausage
1/2 lb of hamburger
chopped onion (to taste)
lots of Garlic! I usually do 4-5 cloves
Add and heat
1 jar of "Classico Spicy Pesto Tomato sauce"
1 can of diced Italian tomatoes in juice
1 can of tomato sauce
1/4 cp of fresh chopped basil
Cook 1 box of lasagna noodles, rinse and lay flat on towel
slice 1- 1 1/2 lbs of mozzarella cheese in 1/4 inch slices
12 oz of Ricotta cheese with 1 egg blended in.
Parmesan cheese
There is a trick to making this lasagna great!!!
Layer the ingredients but very little sauce between the noodles. So that it's mostly cheese.
You add enough just to wet the noodles. After layering, pour the remainder of the sauce on top add Parmesan cheese, olives or any garnish and bake for 1 hour at 350 degrees.

Pesto Burgers
Okay ladies,
Here is another EASY recipe for you. I am all about few ingredients.
I have made this for a few friends and they all rave about them.
Pesto Sauce in a jar
cubed mozerella
Hamburger...the best is ground sirlon if you can find it.
combine the following ingredients and grill on the BBQ. Make sure not too overdo it.
I top my burger off with basil and tomatoes. Tastes great!
Another option is bruchetta in a jar with the same ingredients. Also excellent but the burgers do not hold together as well. Better to crush the tomatoes a little before blending.
NOW you are ready for your labor day picnic.

Overnight Egg Casserole
Okay, I had this last year at MOMs group and Lynne Paulus brought it. So I made it for Moms last thursday and Julie asked me to post it for everyone so here you go.
I will give you my variation but you can get really wild and do just about anything with different ingredients it.
1 loaf of French Bread with crusts cut off
1 pkg of bacon, (heres a trick! Cook it in the oven on broil on top of a cooling rack in a cookie sheet for the grease to drop through. This will keep the fat separate from the bacon. Works great for less grease!
4 cups of cheese. I used 2cps of colby and 2cps of pepperjack.
1 red pepper
1 green onion
10 eggs
2 1/2 cps of milk
1 cp of half and half or cream
Use a 9x13 pan
You will layer ingredients with
bread, cheese, bacon, peppers and onion and repeat again.
Mix eggs with the milk and cream and pour on top.
Make sure all layers are covered and milk goes to the top of dish.
Put in the refrigerator for overnight and pull it out in the morning and bake it at 375 for about and 1 hour or more until cooked through.
This dish makes it possible to bring eggs to Moms group and still have time to get ready.
So no more excuses ladies...hehehehe.

Too simple to be good PotRoast
2lbs of meat any kind will work.
1 can of cream of mushroom soup
4 cloves of garlic (crushed)
1 onion (quartered) I substituted onion powder
black pepper to your preference
combine all ingredients in a crockpot. Cook all day and serve over rice or egg noodles.
My 4 year old loves this and can eat it 2 days in a row.
Some add carrots, but I think mushrooms would be good. My husband is not a fan of mushrooms so that will not happen in this house.
Blessings!
