Strawberry Challenge - RULES DEFINED

Whomever posts a recipe using strawberries within the next five days will recieve a jar of strawberry jam from me.

Okay, Facebook got me scared....The first 10 people to post a strawberry recipe will receive a jar of freezer jam!

You go girl. I'm not even making jam this year :( First time in a long time. My family doesn't eat it. What a bunch of sickos! What I'd give for a PB&J with strawberry freezer jam!

Fruit Pizza
1 1/2 c flour
3 T Sugar
3/4 c butter
3oz Cream cheese, softened
1/3 c sugar
1 t vanilla
1 c Whipped cream, chilled
Strawberries (or any soft fruit)

Crust: cut butter into flour. Add 3T sugar and mix well. Pat mixture into pizza pan. Bake 350 for 15-20 minutes. Cool

Filling: beat the cream cheese, remaining sugar and vanilla on low speed unitl smooth. Add un-whipped whipping cream. Beat at med speed unitl stiff peaks. Spread on cooled crust.

Topping: select soft fruits: STRAWBERRIES, raspberries, kiwi, banana, pineapple, mandarin oranges, mango, blueberries, peaches, ect... Slice and arrange fruit on filling. Chill before cutting and serving.

ENJOY!!!!! Our family likes Strawberry, blueberry and banana for the 4th of JULY!

SPINACH & STRAWBERRY SALAD WITH POPPY SEED DRESSING (Megan Keim)

DRESSING:

1 sm. onion
1 1/2 c. sugar
1 tsp. dry mustard
2 tsp. salt
3/4 c. vinegar
2 c. salad oil
2 tsp. poppy seed

Place onion in blender and chop. Add sugar, dry mustard, salt and vinegar to onion; blend well. Add salad oil a small amount at a time and blend well after each addition. Pour into jar or container and add poppy seed. Refrigerate. Shake well before pouring over fresh spinach and sliced strawberries.
